Dad’s dateloaf

I have been asked, and asked again so here it is!

My fabulous dad, John Suckling, has been baking for us what seems like forever!

Anyhow traditional recipes like Anzac and Date loaf have been amongst his most favourite.

So, here it is!

Dads date loaf

500g pitted dates

2 cups boiling water

90g butter

2 teaspoons bicarbonate Soda

1 cup sugar

Put on the stove, bring to boil and turn off

When cool

Add 3.5 cups of SR flour

2 well beaten eggs

Bake in 2 sandwich loaf tins for 50min at 160'C

Serve sliced with butter
